For Negroni Week, I wanted to make something that still drinks like a Negroni, just with a little more tropical energy. This is a rum-based White Negroni built around pineapple and fig leaf, using those coconut, vanilla, and baking spice notes to tie everything together.
Add everything to a mixing glass with ice and stir until chilled and diluted. Strain into a rocks glass over a large cube, then garnish with pineapple fronds and a slice of pineapple. As the pineapple sits in the drink, it adds even more fresh fruit character.
