Have you ever had a habanada? These peppers taste like habaneros but have no heat or spicy aspect to it, just pure floral fruity pepper flavor. I feel like this would be a fun flavor profile to use with mezcal, and so I infused it for 24 hours in a 1:3 pepper to mezcal ratio by weight, then strained. The result was very fruity and tropical, but it lacked a bit of that vegetal pepper flavor. Still delicious, and so I made a little riff on my favorite mezcal cocktail- the Naked and Famous.
